Make it at home…your way!

If you have a busy family and you have not invested in a high end blender like a VitaMix or a BlendTec – I would highly recommend that you do so. Soon. For a $400 investment (that I made 5 years ago) I have created countless meals using a VitaMix.  I use it every day for everything from scrambled eggs to smoothies to peanut butter.  Yes, I said Peanut Butter. But that will come later.  And I know this investment has saved my family hundreds and hundreds of dollars over the last several years.

I made all of my children’s baby food in the VitaMix – I’m still amazed at how easy it was.  I would throw in leftovers with a little banana – I would make little concoctions and experiment with different flavors.  My husband called it the “will he eat it game”.  I had fun doing it and It felt great because I always knew exactly what my boys were eating.

This handy little machine also helps with “hiding” vegetables, a skill born by the fact that my 3 year old won’t touch vegetables.  I can’t get anything green, orange, yellow or purple into his mouth. So I have had to get really good at veggifying his favorite things like Mac * Cheese and scrambled eggs.  Here are a couple of recipes that I use pretty regularly.

“Green Eggs” 

3 large eggs

1 Tbsp Half & Half or whole milk

1/2 cup fresh spinach

1/4 cup shredded cheese

Seasonings (salt, pepper, powdered garlic, dried basil)

1/2 tbsp butter or olive oil

Put all ingredients except cheese into the VitaMix – blend on “5” for 20 seconds

Pour into a hot skillet with butter or olive oil (heated with pan)

Scramble on medium heat until firm – top with shredded cheese before serving.

greenSneaky Mac and Cheese

(I have made the cheese sauce from scratch – but on busy week nights, this is the recipe I use)

1 box Kraft Macaroni and Cheese

1/2 cup fresh spinach

1/2 cup canned chick peas

1/2 cup milk

1 tbsp butter

Prepare noodles as indicated on the box – place back into  boiling pot

Blend spinach, chick peas and milk together in VitaMix

Mix butter in with noodles (while still hot)

Add blended spinach mix to noodles

cook over medium heat for 5 minutes

serve!

if you like a smoother texture – increase the milk by 1/3 cup.
